one.of the cooler weather soups we serve at the cafe is corn chowder. sometimes i add bacon and always use potatoes and onions. i find that a couple pinches of nutmeg add flavor. i start with a roux made with butter, flour and milk, adding a very healthy (or not) amount of cream at the end of the process. my friend , sharon, brought some of her corn chowder to me and she had added pieces of grilled chicken breast. a nice touch. i have been looking through a kids’ cookbook for the heck of it and i came across a very simple corn chowder. if you have children, here’s a chance for them to make dinner. when my kids were young, i can honestly say that i would not have had the patience, but moms today are….well…..seemingly, more patient, at least the moms are that come to the cafe with the kids. here’s creamy corn chowder.<\/p>\n

1 T. oil
\n1 onion, finely chopped
\n3 medium potatoes, peeled and chopped
\n2 cups water (i would use chicken broth)
\n1\/2 t. salt
\n1\/4 t. pepper
\n2 T. corn starch
\n2 151\/4 ounce cans corn, drained
\n2 cups milk
\n2 T. butter or margarine<\/p>\n

in a large saucepan, heat the oil over medium heat.
\nadd the onion and cook for 5 min., stirring frequently.
\nadd the potatoes, water (or broth), salt and pepper.
\nturn up the heat until mixture starts to boil.
\nwhen the soup starts to boil, reduce to simmer and continue to cook for about 20 minutes, or until potatoes are tender.
\nin a separate bowl, mix the cornstarch with a little warm water to avoid clumps.
\nadd the corn, milk and butter to the soup. stir in the cornstarch to help thicken the soup.
\ncontinue simmering for another 20 minutes, stirring occasionally.
\ncool slightly before serving. try your chowder with a salad and fruit for a complete meal.<\/p>\n
