there were some classy ladies and one classy guy at the cafe last sunday. they were participating in a cooking class. one of the ladies had approached me a month ago about the possibility of holding a class on a sunday. i said ok if she could “round up” a total of 8 people. she did and we had a date at 2:30 to make something. even if just a mess! but these people were ready to cook. we started with a galette filled with great basic stuff. a galette is a rustic tart, free-formed with no pie or tart pan. we used store bought pie crust, which they rolled into a 12 inch or so circle. then they filled the middle with artichokes, carmelized onions, roasted grape tomatoes, fontina, herbs and love. we then pleated the edges about 2 inches in from the edge so the filling was exposed. brushed the tart with egg wash, carefully place it on a baking sheet with parchment and each person’s initials….for ownership. bake at 400 degrees for 30 minutes.<\/p>\n

meanwhile, we filled portabella mushroom caps with a delectable crabmeat concoction, which included a couple glasses of wine each and a little sherry for the caps. the filling included scallions, cream cheese, butter, sweet red pepper, garlic, old bay, soft bread crumbs, parmesan, said sherry and more love. we topped the caps with a little fontina. no one wanted to bake them at the cafe, but opted instead to take them home. the happy group sat around consuming wine and a baked raspberry brie, visiting and wanting more classes. in the past i have done numerous classes, but find it a little challenging now that i live in bolton landing. but i have decided i will do more because, truthfully, i had a great time too!<\/p>\n","protected":false},"excerpt":{"rendered":"
