He has been making them<br \/>\nwith his father since he was a child.<br \/>\nNow he has opened his own restaurant,<br \/>\nMIA Pizzeria, at 406 Corinth Road in<br \/>\nQueensbury.<\/p>\n<p>The Amato family lived in Sicily before<br \/>\nmoving to the United States. The family<br \/>\nhas owned several pizza parlors. Amato&#8217;s<br \/>\nbrother operates Pope&#8217;s Pizza in Saratoga<br \/>\nSprings.<\/p>\n<p>At the center of the MIA Pizzeria operation<br \/>\nis the pizza, with an authentic<br \/>\nSicilian recipe, using lots of cheese and<br \/>\nfresh toppings. A large pizza is more than<br \/>\n18 inches in diameter, which Amato said<br \/>\nis more than two inches larger than what<br \/>\nmost pizzerias serve.<br \/>\nAmato believes that attention to quality<br \/>\nand detail sets his business apart from<br \/>\nthe rest.<br \/>\n&#8220;My dad always wanted me to make<br \/>\nthings the right way, not to skimp out or<br \/>\nuse a cheaper product,&#8221; he said.<\/p>\n<p>Amato said that everybody loves his<br \/>\nversion of pizza. He has even had other<br \/>\npizzeria owners ask him for his recipe,<br \/>\nwhich he refuses to give out.<\/p>\n<p>MIA Pizzeria offers American pizza<br \/>\nfavorites such as pepperoni and sausage,<br \/>\nas well as some Sicilian favorites.<\/p>\n<p>In addition to pizza, MIA Pizzeria offers<br \/>\nmeals such as lasagna, eggplant and chicken<br \/>\nparmesan, veal, and pasta dishes. All<br \/>\nentrees are prepared in Sicilian fashion.<\/p>\n<p>Guests at the restaurant can find authentic<br \/>\nSicilian cuisine. On the menu is<br \/>\narracina, rice balls surrounding a seasoned<br \/>\nmeat ball, covered in bread crumbs<br \/>\nand deep fried. Soon the restaurant will<br \/>\nalso feature pane e panelle, fried chickpea<br \/>\nflour patties served on a roll. Both items<br \/>\nare very popular in Sicily, he said.<\/p>\n<p>His father has now retired from the<br \/>\npizza business, but pizzas are still a family<br \/>\naffair for the Amato family. His wife helps<br \/>\nwith operations of MIA Pizzeria, including<br \/>\nmenus, bookkeeping, and more.<br \/>\n&#8220;My wife is the brains of the operation&#8221;<br \/>\nsaid Amato.<\/p>\n<p>The restaurant offers delivery. The<br \/>\nphone number is 792-6427.<\/p>\n<p>The restaurant is open 11 a.m. to 10<br \/>\np.m. Monday through Thursday; 11 a.m.<br \/>\nto 12 a.m. Friday and Saturday; and noon<br \/>\nto 8 p.m. on Sundays.
