It will be primarily a take-out and delivery<br \/>\nrestaurant with only a few tables.<\/p>\n<p>The site of the new restaurant is the former<br \/>\nCasino Lounge. The building has been completely<br \/>\ngutted, according to Bartlett, and is getting a<br \/>\ncomplete renovation, inside and out. Once the<br \/>\nwork is completed and the new equipment has<br \/>\nbeen installed, Bartlett will be ready to start hiring<br \/>\nand training his staff. He expects to have 15<br \/>\nemployees, both full time and part time.<br \/>\nBartlett said he will offer healthy (&#8220;not necessarily<br \/>\nlow calorie&#8221;) food made from scratch, much<br \/>\nof it cooked in a wood-fired rotisserie oven.<br \/>\nAs the name suggests, chicken will be the house<br \/>\nspecialty, cooked over the wood fire &#8220;that provides<br \/>\nan extra layer of flavor,&#8221; he said.<\/p>\n<p>Other entrees will include a roast pork, &#8220;like<br \/>\npulled pork, but different;&#8221; ribs, chicken pot pie<br \/>\nand a smoked meatloaf, formed on a sheet pan<br \/>\nand roasted in the rotisserie oven.<\/p>\n<p>For customers who prefer vegetarian fare, the<br \/>\nrestaurant will serve salads, paninis, and a variety<br \/>\nof appetizers. Bread for the paninis will be made<br \/>\nin-house, Bartlett said, as will the mozzarella<br \/>\ncheese and the grilled vegetables. Vegetable side<br \/>\ndishes will include braised beans, roasted Brussels<br \/>\nsprouts, and Mediterranean couscous.<br \/>\nHe said there will be no processed food.<\/p>\n<p>Despite the upscale gourmet menu items,<br \/>\nBartlett said, the restaurant&#8217;s price point will be<br \/>\nsimilar to standard delivery and take-out restaurants,<br \/>\nabout $20 to feed a family of three.<br \/>\nNo alcohol will be served but the restaurant<br \/>\nwill offer some &#8220;real sugar&#8221; soft drinks and Pure<br \/>\nLeaf iced tea.<\/p>\n<p>Online orders will go directly to the kitchen, in<br \/>\nan effort to eliminate errors and reduce delays. It<br \/>\nwill also be possible to order by telephone or in<br \/>\nperson. Food can be picked up at the restaurant<br \/>\nor delivered.<\/p>\n<p>Bartlett is a graduate of the Culinary Institute<br \/>\nof America in Hyde Park, N.Y., and has an MBA<br \/>\ndegree from Union College in Schenectady. This<br \/>\nis his first venture as a restaurant owner but, he<br \/>\nsaid, he has been working for others for 18 years.<\/p>\n<p>Dizzy Chicken will be open seven days a week,<br \/>\nfrom 10:30 a.m. to 10 p.m. The website is still<br \/>\nunder construction.
