Chris Aunchman is the founder of Macro Nu,
\na new business bringing ready-made whole food
\nmeals to the healthy but hurried consumer. The
\nconcept is based on Macro Nu-trients, namely
\nmeat and vegetables.<\/p>\n

In 2004, Aunchman and his brother started
\nAngelina’s Pizzeria in Queensbury. Shortly after,
\nthey bought out their parents’ small Fort Edward
\ndeli, renaming it One6Five Broadway. Two years
\nago, Aunchman’s grandfather passed away and
\nleft him a 140-acre flower nursery business in
\nComstock.<\/p>\n

“Running a pizzeria is a lot of work and you
\ntend to put the long days, the long hours, ahead
\nof yourself,” he said.
\n“After 10 or 12 years in the
\nbusiness, I was at a point where I wanted more
\npersonal growth. I wanted to take care of myself. We
\nalways talked about growing our own tomatoes for
\nthe pizzeria, but we never really got into it. I went
\nup to the farm to do something for myself, and I
\njust started growing chickens. In typical fashion
\nof the way we’ve done things with the business, I
\nwent out and bought 300 baby chickens.”<\/p>\n

Aunchman began researching ways to work
\nwith local farms to buy protein and vegetables for
\nhis restaurant. At the same time, he began doing
\ncross-fit, where emphasis is placed on a whole food
\nlifestyle and knowing where the food comes from.<\/p>\n

“We live in such an agriculturally rich area, and
\nhere I never even knew it. We had 140-acres and had to drive by 10 farms just to get there, and I
\nwas buying my meat at a grocery store. It opened
\nmy eyes to the niche of locally-raised protein and
\nvegetables,” said Aunchman.<\/p>\n

Aunchman sites the plethora of knowledge and
\nnutritional information available to consumers.
\n“We’re creating a business based on you
\nknowing what you need, and not someone on TV
\ntelling you what you need. We just facilitate that by
\nbuilding your meals around your macros,” he said.<\/p>\n

Macro Nu is short for Macro Nu-trition. It
\nis a personal catering business. Aunchman and
\nstaff take locally grown meat and vegetables,
\nand prepare meals with chefs. Meals are cooled,
\nweighed and cut, packaged as a to-go meal, and
\ndelivered to clients. Packs are sold and able to be
\nrefrigerated.<\/p>\n

“It’s basically whole foods that are ready to go
\nwhen you’re ready to eat. It’s like Nutrisystem but
\nwith whole foods,” said Aunchman.
\nThe company delivers food twice a week. For
\npeople who eat Macro Nu, the protein is never
\nolder than four days,” Aunchman said.<\/p>\n

Aunchman is working with several local
\ngyms in the immediate Glens Falls area to
\ndevelop subscription-based, restaurant-quality
\ntransformation packets. There will be a three-week
\nminimum commitment. He said the price-point
\nwill be “considerably lower” than regular consumer
\nprices, although the details are still being discussed.
\nAunchman has expansive plans for the company, including solar power on the farm and
\nexpanding into other regions.<\/p>\n

“Within three years, I’d like for anyone to be able
\nto order on the internet from anywhere on the East
\nCoast, and have that Macro Nu meal prepared by
\nprofessionals in the area with food grown in the
\narea,” said Aunchman. Negotiations are already
\nunderway with a restaurant in New Hampshire.
\nAunchman is also developing an online
\nordering site.<\/p>\n

Aunchman’s vision has carried over into how
\nhe does business with One6Five Broadway.
\n“We pared the menu down to eliminate all
\nprocessed foods aside from condiments. We
\nhave the highest quality product out of any other
\npizzeria in the area. We don’t charge a premium
\nfor that–it’s still reasonably priced. That’s how
\nit ties in. I know people coming into the pizzeria
\nare in a hurry, and I want to make sure I give
\nthem the most nutritious thing I can based on the
\nparameters of it being a pizzeria,” he said.<\/p>\n
