He is the son of Jack Gates, who managed Red Coach Grill, whose portait is hanging on the wall behind his son.<\/figcaption><\/figure>\n<p>By Ann Donnelly<\/p>\n<p>Chef Christian Gates has the restaurant business in his blood. His father, well-known restaurateur Jack Gates, worked as manager of the Red Coach Grill outside Lake George from 1969 to 1999. In 2004, with sons Christian and David, he opened Jack\u2019s American Bistro at 730 Upper Glen St., Queensbury.<\/p>\n<p>\u201cI didn\u2019t train in a fancy culinary school,\u201d said Gates. \u201cI am self-taught, learned from working in the area\u2019s best restaurants.\u201d<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>In his youth, he worked alongside his father and, at age 17, started at the Howard Johnson\u2019s in Lake George. He then took some time off from the industry until he returned to work at The Waterhouse in Lake Luzerne. When his family opened Jack\u2019s in 2004, he brought this skill and experience to his role as chef.<\/p>\n<p>\u201cWhen we opened, we aimed to be a local place where people are comfortable, have a meal, and meet with friends, an \u2018upscale neighborhood setting,\u2019\u201d he said.<\/p>\n<p>Through the years, even after Jack\u2019s death in 2012, they have maintained this atmosphere with many regular customers who mostly live within an hour of the restaurant.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p><strong><span class=\"Apple-converted-space\"><span class=\"s1\"><span class=\"s2\"><!--more--><\/span><\/span><\/span><\/strong>\u201cMy father\u2019s philosophy was to start with the right ingredients, to buy the best you can afford. You have to use suppliers you can rely on. We get the best shrimp from a supplier we\u2019ve used for 19 years,\u201d Gates said.<\/p>\n<p>While the restaurant has steak, \u201cWe didn\u2019t want to be a \u2018steak house.\u2019 Seafood is also big here. If we were to do it over, I might have tried to convince my dad to make it a seafood restaurant,\u201d he said.<\/p>\n<p>Gates said consistency is key to the success of a restaurant, He likes to be creative and broaden ideas. \u201cThe Food Network has done much to expand restaurant goers\u2019 tastes,\u201d he said. \u201cI took a chance and tried curry dishes that sold well. Things you think will work, won\u2019t at times, and vice versa.\u201d<\/p>\n<p>Gates also credits the quality and consistency of staff as a factor in the restaurant\u2019s success. \u201cWe haven\u2019t had a lot of staff turnover over the years.
