This weekend I wanted to have some fun in the kitchen! I found this recipe with some of my favorite ingredients and decided to give it a try! It was amazing I have never made my own pesto from scratch and it was very fresh and tasty. If your looking for an easy recipe I recommend you give this a try!

Ingredients
2 quarts plus 1 tablespoon water, divided
1 (16-ounce) package vacuum-packed gnocchi (such as Vigo)
4 cups (1-inch) slices asparagus (about 1 pound)
1 pound peeled and deveined large shrimp, coarsely chopped
1 cup basil leaves
2 tablespoons pine nuts (toasted)
2 tablespoons pre-shredded Parmesan cheese
2 teaspoons fresh lemon juice
2 teaspoons bottled minced garlic
4 teaspoons extra virgin olive oil
1/4 teaspoon salt (I added a little more salt to taste once everything was mixed together)
Preparation
Bring 2 quarts water to a boil, add gnocchi to pot; cook until done (gnocchi will rise to surface). Cook asparagus in hot water until tender (I used fresh asparagus). Cook shrimp in a pan with a little bit of olive oil until cooked (4-5 minutes, shrimp will turn pink).
Combine remaining 1 tablespoon water, basil, and next 4 ingredients (through garlic) in a food processor; process until smooth. Drizzle oil through food chute with food processor on; process until well blended. Add salt and basil mixture to shrimp, asparagus and gnocchi mixture; toss to coat.
Add some garlic bread and maybe a side salad for a complete meal!
