Rainy weather getting you down? Stay warm with this great soup recipe! Perfect for a cold night, and it makes lunch the next day. A very good treat for all!
1 lb 90% ground beef
1/2 c chopped onion
2 cloves garlic minced
1/2 c carrots diced
1/2 c celery diced
3 c water( may need more)
1 t. Italian seasoning
1c + 2 T. spaghetti sauce
2 t. beef extract or paste
1 c spaghetti (broken into pieces)
1 can kidney beans (drained and rinsed)
1/2t. salt and pepper
3/4 c. zucchini diced
- In a large pot, brown beef, add chopped onion and garlic, stir until onion is slightly soft.
- Add carrots,celery, water, Italian seasoning, spaghetti sauce, beef extract and simmer for 10 minutes
- Cook spaghetti in a pot of boiling water until Al Dente and add to the soup mixture with kidney beans, salt,pepper and zucchini
- Simmer for 10 minutes, stirring occasionally
- Serve in bowls with grated Parmesan cheese on top
- Warm a fresh baguette and serve with the soup
