Hey Foodies! I made a gourmet dinner last night for Valentine’s Day and I wanted to share what I made with you!
This is what was on the menu last night….
1. Filet mignon wrapped in apple smoked bacon and marinaded in sweet mesquite sauce with a classic Bearnaise sauce.
2. Parmesan and cheddar stuffed mushrooms.
2. Maple glazed carrots.
4. Garlic butter smashed potatoes.
5. Cheddar biscuits.
Making this meal was actually easy…despite the smoke alarm going off 20 times! My boyfriend’s oven is from like 1975 and so is the smoke alarm! I was using oven mits trying to cool off the alarm every 10 minutes. Not cool!
For the steak, all I did was use tooth picks to hold the bacon in place. I marinated the steak over night in a plastic bag. I broiled the steak for about 5 minutes on each side. Then presto! It’s done.
For the Bearnaise sauce, I bought a packet. I needed to combine, butter and milk. I also threw in some yellow and red peppers so it looked pretty!
The mushroom was a piece of cake…well not literally. I combined 1.5 cups of breadcrumbs, with 1/4 cups Parmesan cheese and 1/4 cups cheddar cheese. A pinch of salt and pepper. I baked them in the oven on 450 for 15 minutes.
For the carrots I seasoned them with salt and pepper. I warmed up 1 tbs of butter and drizzled it over the carrots. I also drizzled maple syrup over the carrots. Baked in the oven for 15 minutes on 450.
Cheddar biscuits were a breeze. I bought a jiffy pre-made mixture and grated cheddar cheese into it. All you need to do is add water. I baked those in the oven on 450 for 11 minutes.
To make the smashed potatoes, I cut them into quarters and boiled them with skins on until soft. I put them in the mixer and combined 1/2 cup milk, 1/4 cup sour cream, 3 tbs of butter and salt and pepper to taste. I had fresh minced garlic and just threw it in there….didn’t measure. But I didn’t put a lot. Mix it all together and voila!
That was my Valentine’s Day meal and if I do say so myself…it was a major hit!
