With spring quickly approaching, I am getting my comfort food fix in before I hit grilling season full force! This is a great & easy pasta dinner. I like to do a few dishes like this over the weekend, so I have lunches for the week!
Start your salted pasta water right away! The rest doesn’t take long at all to put together!
Ingredients:
- 6 sausage links (I like spicy Italian)
- Olive oil
- Garlic to taste
- 1 bag frozen broccoli florettes
- Penne pasta
- Stock (I use chicken)
- Romano cheese
- Fresh parsley
- Fresh Thyme
- Dried oregano
Drizzle the skillet with olive oil and brown the sausages. Once browned, I take them out and slice them and set to the side.
Add the minced garlic and a splash of stock stir well scraping any bits off the bottom. Add the broccoli and gradually mix in more of the stock. It should take about 2 cups of stock to make enough to coat the pasta. Add the sausage back in and cook until broccoli is cooked to your liking. I prefer it a bit well done for this meal. Add the pasta, herbs, fresh pepper & salt to taste and freshly grated romano cheese. In my opinion, if you’re going to use cheese, use fresh! Food is only as good as the quality of the ingredients you use.
Plate using your favorite pasta dish and top with some fresh chopped herbs, grated cheese and fresh cracked pepper. Served with a salad, garlic bread and a nice glass of wine, this is a nice dish to whip up quickly and enjoy after a long day of work!
