Hey foodie friends! This one has me so excited! My friend Jules inboxed me asking for a no mayo pasta salad recipe. This is the first one that came to mind. I sent her the recipe and she made it and sent me photos! How perfect is that?

Ingredients:
- 8 oz box of radiatore pasta
- 8 oz of feta cheese
- 5 plum tomatoes
- 1 lemon
- 1/2 cup olive oil
- Fresh herbs: parsley, thyme, oregano, rosemary
- 2 large cloves of garlic
- 1 package of chopped/frozen spinach
- Salt & pepper to taste
This one is pretty straight forward.
Combine the olive oil lemon, herbs & garlic. I shake them in a container & set aside.
Get the pasta started (don’t overcook)
Cut tomatoes in half lengthwise, drizzle w/ olive oil, salt, pepper & herbs. Roast in a 350 oven cut side up for half an hour. Turn and roast another 10 min. When finished, seeds will lift right out & skin will pull right off. Dice into small pieces.
Wring the thawed spinach in a paper towel to get out all the water.
Toss all ingredients but the feta in a large bowl. Let sit. You may need to add a bit more S&P or dash of olive oil.
I toss in the feta just before serving so it doesn’t get mushy. The pasta is best if left in the fridge overnight.
