Nothing marks the beginning of fall<\/a> like Adirondack Balloon Festival<\/a> weekend! This year it’s bigger than ever as the festival celebrates it’s 40th birthday<\/a>. Catching the balloons as they lift off in the early morning involves getting up at the crack of dawn (literally), but it is totally worth it.<\/p>\n

The schedule for this weekend brought to mind some quick & easy dishes that can be done the day before and reheated quickly throughout the weekend. These will cover breakfast, lunch and dinner. Just add a tossed salad to round out the meal.
\nWe made quiche & chicken divan (recipe coming soon). I’m not a baker, so quiche that does not require me to make a crust is right up my alley.<\/p>\n
