Nothing marks the beginning of fall<\/a> like Adirondack Balloon Festival<\/a> weekend! This year it’s bigger than ever as the festival celebrates it’s 40th birthday<\/a>. Catching the balloons as they lift off in the early morning involves getting up at the crack of dawn (literally), but it is totally worth it.<\/p>\n The schedule for this weekend brought to mind some quick & easy dishes that can be done the day before and reheated quickly throughout the weekend. These will cover breakfast, lunch and dinner. Just add a tossed salad to round out the meal. <\/p>\n Super Simple Quiche:<\/b><\/p>\n Preheat oven to 400 <\/p>\n We added cooked broccoli, bacon, mushrooms & shredded cheddar Note: <\/b>The center may look a bit loose, but it will set. \nWe made quiche & chicken divan (recipe coming soon). I’m not a baker, so quiche that does not require me to make a crust is right up my alley.<\/p>\n\n
\nWhisk together eggs, milk & Bisquick
\nPour into a buttered pie dish<\/p>\n
\nBake until top is golden.
\nTest by inserting a knife in the center (if it comes out clean, it’s cooked)
\nLet quiche cool & set before cutting<\/p>\n
