This one has me so excited! My friend Jules inboxed me asking for a no mayo pasta salad recipe. This is the first one that came to mind. I sent her the recipe and she made it and sent me photos! How perfect is that?<\/p>\n<p>I am so excited to take this blog in a more interactive direction in 2013! Feel free to ask for recipes, share yours or just leave a note to say hello. Happy New Year to all of our fans. You guys ROCK!<br \/>\n<b>Ingredients:<\/p>\n<p><\/b><\/p>\n<ul>\n<li>8 oz box of radiatore pasta<\/li>\n<li>8 oz of feta cheese<\/li>\n<li>5 plum tomatoes<\/li>\n<li>1 lemon<\/li>\n<li>1\/2 cup olive oil<\/li>\n<li>Fresh herbs: parsley, thyme, oregano, rosemary<\/li>\n<li>2 large cloves of garlic<\/li>\n<li>1 package of chopped\/frozen spinach<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.glensfalls.com\/gourmet\/wp-content\/uploads\/sites\/111\/2013\/01\/jules-pasta-2.jpg\" width=\"260\" height=\"195\" alt=\"jules-pasta-2.jpg\" class=\"aligncenter\"><\/p>\n<p>This one is pretty straight forward.<\/p>\n<p>Combine the olive oil lemon, herbs &amp; garlic. I shake them in a container &amp; set aside.<\/p>\n<p>Get the pasta started (don&#8217;t overcook)<\/p>\n<p>Cut tomatoes in half lengthwise, drizzle w\/ olive oil, salt, pepper &amp; herbs. Roast in a 350 oven cut side up for half an hour. Turn and roast another 10 min. When finished, seeds will lift right out &amp; skin will pull right off. Dice into small pieces.<\/p>\n<p>Wring the thawed spinach in a paper towel to get out all the water.<\/p>\n<p>Toss all ingredients but the feta in a large bowl. Let sit. You may need to add a bit more S&amp;P or dash of olive oil.<\/p>\n<p>I toss in the feta just before serving so it doesn&#8217;t get mushy.
