I originally posted this photo during the <a href=\"https:\/\/www.glensfalls.com\/things-to-do\/balloon-festival\/\">Adirondack Balloon Festival<\/a> with some make-ahead meal ideas. I posted the <a href=\"https:\/\/www.glensfalls.com\/gourmet\/2012\/09\/quiche\/\">quiche recipe<\/a> then. Sorry it took me until now to get to the <b>chicken divan<\/b>!<\/p>\n<p>This version of <b>chicken divan<\/b> is pretty quick, very easy &amp; a real crowd pleasing dish! I serve it with just a simple salad on the side, but you could serve a rice dish as well.<br \/>\n<img decoding=\"async\" loading=\"lazy\" src=\"https:\/\/www.glensfalls.com\/gourmet\/wp-content\/uploads\/sites\/111\/2013\/01\/devan.jpg\" width=\"260\" height=\"195\" alt=\"devan.jpg\" class=\"aligncenter\"><b>Chicken Divan Recipe: <\/b><\/p>\n<ul>\n<li>1 lb. boneless\/skinless chicken breast (butterflied or pounded thin)<\/li>\n<li>1 bunch of fresh broccoli<\/li>\n<li>2 cups shredded cheddar cheese ( I like sharp for this)<\/li>\n<li>2 12 oz cans cream of chicken soup<\/li>\n<li>12 oz. mayo<\/li>\n<li>1 tsp. lemon juice (fresh is best)<\/li>\n<li>1 cup (or so) seasoned bread crumbs<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<\/ul>\n<p><b>Get cookin&#8217;: <\/b><\/p>\n<ul>\n<li>Preheat oven to 350<\/li>\n<li>Chop the broccoli into thin spears &amp; lay into the bottom of a 9 x 12 baking dish<\/li>\n<li>Blend soup, mayo, lemon, salt &amp; pepper well in a bowl<\/li>\n<li>Lay the thinly slice or pounded chicken over the broccoli<\/li>\n<li>Pour the sauce over the top<\/li>\n<li>Cover with the shredded cheese<\/li>\n<li>Cover evenly with seasoned bread crumbs<\/li>\n<\/ul>\n<p>Bake in preheated oven for about an hour. Times may vary. The dish is done when it is bubbling and the top is golden brown.<\/p>\n<p><b>Tip: <\/b>Don&#8217;t cut right away. Like any casserole it is better when it sits and gets to room temperature.
