From Ray Supply to the Juicin’ Jar, Downtown Glens Falls has certainly become a hotspot for all kinds of small businesses. Over at the historic Empire Theatre Plaza, a unique cafe is set to open next month and offer custom-made meals for those with special diets or anyone who would like wholesome food – Fresh ADK!

Unlike other cafes and restaurants with a fixed menu, all items at Fresh ADK are customizable, so patrons can create exactly what they’re craving. Customers will be able to purchase made-to-order sandwiches, salads, quinoa and rice bowls, wraps, omelettes, and even souffles.
Once a meal item has been selected, customers will then be able to choose from a variety of fresh ingredients to add what they want. Additionally, there will be options to pick one of Fresh ADK’s suggested food and ingredient combinations.
According to the Post-Star, the owner of Fresh ADK, Melissa Brennan, conceived of Fresh ADK after being diagnosed with Celiac disease. Since the disease forced her to eat gluten-free foods, she came up with the idea of a cafe for those with special diets.
For Brennan, Fresh ADK will cater toward people on a vegetarian, vegan, Paleo, or gluten-free diet, as well as anyone in the Glens Falls Region looking for a new healthy place to eat at.
The cafe will be located at the Empire Theatre Plaza, 11 South Street, in the former home of the North Country Coffee Cafe. Although pricing hasn’t been finalized yet, the plan is for Fresh ADK to be open Monday through Friday, 6:30AM-5:30PM, and Saturday, 8:00AM-3:00PM.
The official opening of Fresh ADK will likely be around December 1, 2016.
