this is a quick sauce recipe for pasta or calzones or any easy dinner. make a batch and freeze it. at this time of year, there should be ample tomatoes ( if the blight hasn’t gotten them), but surely there are plenty at the farmers’ markets. seconds work fine. this recipe makes 3 cups, but if i was going to go through the performance, i would double it. start with;
1/4 cup olive oil
1 cup onion, diced
3 garlic cloves, sliced
1/4 t. red pepper flakes
4 cups fresh tomatoes, halved or quartered (if large)
1 t. sugar, optional
1/4 cup fresh basil leaves, thinly sliced
heat oil in a large saute pan over medium heat. add onion, cook til soft, 6 min.. stir in garlic and pepper flakes; saute 1 minute
add tomatoes and sugar. cook til tomatoes soften, about 10 minutes, then coarsely crush with a potato masher. simmer 5-8 minutes to thicken, then season with salt and pepper. pulse in a food processor or an immersion blender. finish with basil
this is a recipe from my favorite magazine, cuisine at home. there are many tips and ideas in every issue, so i will continue to find interesting tidbits and recipes to blog about. this sauce, however, is making my mouth water. i envision it on angel hair with some butter (everything’s better with butter) and fresh asiago cheese.
