a week ago i bought the latest copy of people magazine because adele was on the cover and i love her music. i read every page of the magazine and, of course, “ate up” the article about adele. in my next life (i know, i know), i want to be able to sing. and i will say that i never ever missed a night of american idol. i have left graduate school classes with some pathetic excuse to get home for the show. i frequently leave library board meetings and i always “bowl through” at wii bowling. but about the soup…… in the issue of people, there is a tomato soup recipe from art smith who was oprah’s chef. he presently works at lady ga ga’s parents’ restaurant in nyc and the next time i visit my kids…i’m going. made the soup and added one ingredient, heavy cream, cuz i had to. only 2/3 cup, though. this recipe doesn’t make much, but it is delicious. says me. here it is.
2 tbsp. olive oil
1/2 onion, chopped
1 stalk celery, chopped
1 clove garlic,minced
1 fennel bulb, chopped
1 can (14.5 oz.) diced tomatoes
1 cup low sodium chicken broth
2 tbsp. chopped fresh basil
2 tbsp. parsley
salt and pepper
1. in a large saucepan, heat oil, add onion, celery, garlic and fennel. cook til vegetables are tender about 10 minutes.
2. add tomatoes and broth, simmer 4 minutes. remove from heat; add basil, parsley, and cream. puree in blender or processor. season to taste.
note: i cooked mine about 15 minutes after tomatoes were added.
