it seems very sad and even unethical that something as tiny as a half pinky finger should have a French name, be very sour and cost a lot. but that’s exactly what a gherkin in vinegar is. it is a cornichon and is a delicate, if ungodly tart tiny cucumber. when you look at the “skin”, you hardly see the bumps that regular pickles have on their skins. these little guys pack a powerful lip-smack and i have decided that there is a bit more flavor when they are tried at room temperature. the reason that i purchased the small jar was because they caught my eye as i was buying roasted red peppers, sitting next to them. i thought why not, remembering a jar that i bought years ago, but couldn’t quite remember if i liked them. after opening and trying one, i did remember how very vinegary they are. if you want to add a little excitement to a regular ole sandwich, give these punch-packing little gems a try. let me know if your eyes watered!
