when the weather heats up, it’s time to start chopping! using tomato juice as the base, we add tomatoes, carrots, onions, green peppers and cucumbers. next we add the chopped garlic and some “heat”. actually this soup thickens as it is chilled, which is the best way to enjoy it. add a dollop of sour cream and you’ve got summer in a bowl! through the many years that we have made this soup, there have been about 5 or 6 customers who have asked to have theirs HEATED. hot cucumbers are another thing. cold it is delicious gazpacho.
