Last week I was craving Salmon and I decided to go with Mediterranean flavors. I didn’t follow a particular recipe, but made it up as I went along. Sounds scary right? It actually turned out phenomenally and it’s my favorite Salmon dish to date!
I’ll be honest, I don’t do a lot of measuring. I guesstimate a lot of the time. But I’ll give you approximate amounts of the ingredients that I used. This dinner serves 4.
Mediterranean Salmon
- 1.5 Cups of black and green olives
- 2 Cups of spinach
- 1/4 Cup of onions
- 1 Red pepper
- 1 small tomato
- 4 small mozzarella balls (about 2 inches in size each)
- Pinch of pepper
-The ingredients above are for the mixture that you top the Salmon with. I do not have a food processor (I probably should get one), but I do have a chopping bowl that was my great great grandmothers. I use it ALL the time and it’s amazing. So I chopped up all of the ingredients very fine.
-Then I took the Salmon and laid it out on pan, and smothered it in lemon juice.
– I put generous amounts of the mixture on top of the Salmon. I cooked the Salmon wrapped in tin foil so the flavors are more rich. Cook in oven at 400 degrees for about 20 minutes.
Smashed Cinnamon Sugar Sweet Potatoes
- 3 Large Sweet Potatoes
- 1 Table Spoons of Cinnamon
- 1 Table Spoon of Sugar
- 3 Table Spoons of Butter
– Boil Sweet Potatoes in a large pot until extremely soft with skins on.
– Use a Potato masher to “smash” the potatoes. It should not be difficult at all because the sweet potatoes should be extremely soft.
-Add ingredients to the sweet potatoes and serve!

They are loaded with vitamins A, C and E – antioxidants that can help prevent heart disease and cancer, bolster the immune system and even slow aging by promoting good vision and healthy skin. They have been recently reclassified as an “anti-diabetic” food. They are anti-inflammatory and can protect against emphysema. Eat them as much as you can!
